Spelt pancakes with fresh berries

Great for a weekend treat, these pancakes are naturally higher in protein by using higher quality spelt flour and increasing the egg compared to traditional pancake mix. Serve with lots of fresh strawberries for a boost in your daily vitamin C intake which may help prevent Type 2 diabetes.

Ingredients

  • 1/4 cup of self-raising flour (spelt)

  • 1 eggs

  • 1/3 cup milk

  • 200 g of fresh strawberries

  • 1 drizzle of maple syrup or honey

Methods

Sift dry ingredients together. Stir in egg and milk. Heat a pan on a medium heat. Drop a teaspoon of sunflower oil onto the hot pan. Pour pancake batter onto the pan. When the pancake bubbles, flip and cook for another minute or two until browned. Serve with fresh fruit and a drizzle of honey or maple syrup.
