Homemade tortillas
You will find that most of the tortillas available in the supermarket are ultra-processed. Here is a simple recipe to make tortillas from scratch
Makes 6
250 g of wholemeal self-raising flour
2 tbsp of extra virgin olive oil
1/4 tsp salt
150 ml of warm water
Combine ingredients in a bowl. Add the warm water and knead to bring the mixture together - you can use the back of a butter knife to bring the dough together. When combined, pour onto a lightly floured surface and knead until soft and smooth - this takes around 5 minutes. Cover with a clean tea towel and rest for at least 15 mins.
Use a knife to separate the dough into 6 pieces of equal size. Roll out each piece as thinly as possible on a floured work surface. You should end up with 6 tortillas. 20 cm round and 2 mm thick
Heat a large frying pan over a medium-high heat. Cook the tortillas for 1-2 mins on each side until golden brown and toasted. Wrap them in foil and cover in a tea towel to keep warm, while you cook the rest. Keeps for two days well wrapped, or cool, wrap and freeze for up to three months.
