Black bean tacos with homemade tortillas
Tacos made with black beans are a great week night vegetarian option - tortillas are super easy to make from scratch and only contain a couple of ingredients.
Ingredients: serves 4
400 g of black beans
1 tsp ground cumin
1 tsp paprika
1 tsp ground coriander
1 small onion finely dished
2-3 cloves of garlic crushed
1 tbsp reduced salt soy sauce
1 chili - de-seeded and finely sliced
1 tbsp tomato paste
oil for frying
200 g of mushrooms sliced
2 tomato
2 tbsp fresh parsley
2 tbsp fresh coriander
1 small red onion - finely diced
200 g of red cabbage finely shredded
200 g of carrot grated
4 tortillas, cooked
1 lime
Heat oil in a large sauce pan. Add onion and garlic and cook until browned. Add cumin, coriander, paprika to pan and stir for one minute or until fragrant. Add tomato paste, soy sauce, chili, mushrooms and black beans to pan with 50-100 ml of water. Season with cracked pepper. Allow to simmer.
Add tomato, red onion, parley and coriander to a bowl and mix to combine
Combine cabbage and carrot to another bowl and stir to combine
Cook tortillas according to recipe directions
