Orange and almond cake
This delicious orange and almond cake is good enough to eat for breakfast! Serve with a dollop of Greek yogurt
Serves 12
2 large oranges
0.75 cups of sugar
250 g almond meal
6 eggs
1 tsp baking powder
Bring a large saucepan of water to boil. Carefully add oranges to water and allow to boil for 30 minutes . Preheat oven to 160°C(140°C fan). Grease and line a 23cm/9" cake pan with baking/parchment paper. Remove oranges from boiling water and allow to cool down. Chop oranges into large chunks removing any seeds and then add to the blender. Blend until smooth. Add almonds, sugar, eggs and baking powder and blend until smooth. Pour mixture into pan and bake for 60 minutes or until a skewer comes out clean when poked into the center. Cool and serve
